- Papas bravas (perfect potatoes topped with rich romesco sauce)
- Mediterranean meatballs (Albondigas)
- Pan con tomate with manchego cheese
- Summer ceviche (seafood)
- Prosciutto wrapped stuffed dates
About the Chef
Chef Janon Bourgeois graduated from the Oregon Culinary Institute with honors in 2012. While living abroad in England, Portugal and France (and more), she honed her appetite for life as a culinary teacher. Chef Janon's career includes running a successful catering company, training as a professional butcher and being a passionate protector of Mother Earth and feeder of humankind at her Portland, Oregon-area restaurant, Simmer Down Cafe. Her "why" is on every plate. Her goal is to nourish members of the Colorado Springs community, and demonstrate how they can nourish themselves. In her spare time Chef Janon hikes, reads tarot cards and dotes on her teenage son.
